We’ve had a pretty easy winter so far in the weather department, but that hasn’t stopped me from dreaming of a tropical getaway, as I do every year around this time. My suitcase isn’t packed, but if you’re like me and looking for a little sunshine on a gray and chilly day, then you’ll love this smoothie. Loaded with immune boosting vitamin C, it’s especially great when you feel like you might be coming down with something. It makes a wonderful sunny addition to a lunch box.
This recipe is adapted from Ruth Tal Brown’s Juice for Life cookbook. It makes enough for a family of four, or two really hungry people!
1 cup of coconut water or filtered water
2 big wedges of fresh pineapple, chopped
3 oranges, peeled and chopped
2 bananas, peeled and chopped
1 kiwi, peeled and chopped
1 teaspoon of bee pollen (optional)
1 tablespoon of virgin coconut oil
Place all ingredients in the blender. Start on low setting and increase the speed gradually to the highest speed.
Blend until smooth (the amount of time will depend on how powerful your blender is).
